1 brown onion
3-4 cloves garlic
1 large sweet potato
1 litre of ready-made chicken or vegetable stock1 large head of broccoli, washed and cut into florets
Cream and black pepper for serving
Chop onion and garlic and sauté gently in a large saucepan.
Peel and chop sweet potato and add to saucepan with stock.
Cover and bring to the boil, reduce heat and leave to simmer until potato is tender.
Add broccoli and continue cooking until stems are tender but still bright green.
Remove from heat and blend.
Serve with a dollop of cream or yoghurt and a sprinkle of black pepper.
